
Tart with nickel-free strawberry jam

Ingredients:
-300/320gr rice flour
-40gr rice starch
-100gr sugar
-70ml rice oil
-2 eggs
-half teaspoon baking soda + a few drops of lemon juice
-a pinch of salt

Procedure:
- combine the sugar with the salt
- add rice oil and mix well
- combine eggs while continuing to mix with whisk
- add flour and baking soda with lemon juice
- finally add the starch
- Knead everything together with your hands until a smooth mixture is obtained
- form a loaf, roll it out, prick the base with a fork and set aside the excess shortcrust pastry
- bake the base at 180 degrees for 10 minutes-in the meantime, form the shortbread hearts to place on the dough
- Spread the jam on the base, decorate with shortbread hearts and finish baking for another 15 minutes in a static oven, always at 180 degreesù
