
Gluten-free apple muffins

Ingredients x 6 muffins:
-1 1/2 apple
-50 g caputo mill rice flour
-50 g oat flour (certified gluten-free if you have celiac disease)
-60 ml of vegetable drink
-25 g of Evo oil
-40 g of whole brown sugar
-1 egg
-1/2 packet of baking powder
-1 teaspoon cinnamon
-grated lemon peel
Procedure:
Preheat oven to 170 degrees F.
Cut 3 quarters of the apple into cubes, the remaining three into thin slices to use for decoration. Meanwhile, beat the egg with a fork, add it to the sugar and whisk.
Add the oil, vegetable drink and grated lemon peel, whisk again.
Then insert the flours, baking powder, teaspoon of cinnamon and diced apples. Mix well. Pour the mixture into muffin cups, filling them 3/4 full. Decorate the surface with the apple slices and bake at 180 degrees for 25-30 minutes (do toothpick test).
