
Strawberry roll with Delicake flour

For the roll
Whip 4 egg yolks with 100 g sugar.
Add 1 teaspoon vanilla, 80 g rice flour, 20 g starch, and 1 teaspoon baking powder.
Incorporate 4 egg whites beaten to stiff peaks with a pinch of salt.
Pour the mixture into a lined baking dish and bake at 180Β°C (350Β°F) for 10 to 12 minutes.
Turn the dough upside down on a damp tea towel, peel off the paper and roll. Let cool.
Stuffing
Cut 250 g strawberries into small pieces, add lemon juice and powdered sugar.
Whip 200 ml of vegetable cream.
Unroll the cooled pastry, spread the cream and scatter the strawberries.
Roll it up again.
Decoration:
Dust with powdered sugar and decorate with whole strawberries. Chill in the refrigerator for one hour. Cut into slices and serve.
